Science on the Plate – The Fifth Taste: A Mediterranean in Transformation The humanitarian gourmet event The Signature Dish: 4 of a Kind will take place on October 22 at 7 p.m. at Cap Aureo Restaurant, Grand Park Hotel Rovinj. This year’s theme, Science on the Plate – The Fifth Taste: A Mediterranean in Transformation, brings gastronomy and science together through the changes that warming seas, shifting biodiversity and the arrival of new species are bringing to Mediterranean ecosystems. The evening will feature Jeffrey James Vella from Cap Aureo, Marina Gaši from Marina Restaurant in Novigrad, Emanuele Scarello from Agli Amici Rovinj, Danijel and Ilja Đekić from Monte in Rovinj, and Maša Salopek from Cap Aureo. Six chefs will present five signature interpretations, ranging from Pacific oyster, bluefish and blue crab to wild boar, black locust and tree of heaven. Each dish offers a different perspective on the changes already taking place in the sea and on land. The name The Fifth Taste does not refer to a new basic taste, nor to umami, but serves as a metaphor for this year’s theme. Here, the “fifth taste” represents the taste of understanding – the moment when, behind an ingredient, we recognize a broader story about a place, an ecosystem and change. The project is being developed in professional collaboration with the Institute of Agriculture and Tourism in Poreč and the Ruđer Bošković Institute – Center for Marine Research in Rovinj. The artistic dimension of the evening will be brought to life by special musical guest Raiven, whose performance is conceived as an integral part of the event’s dramaturgy. From the very beginning, The Signature Dish has had a humanitarian and educational mission, focused on supporting young culinary talents. This year’s proceeds will be donated to Vazmoslav Gržalja Primary School in Buzet. The dinner begins on October 22 at 7 p.m. and is priced at €195 per person, including wine pairing.
