Novija povijest istarske gastronomije (Truffles, Prosciutto, Supa. A Recent History of Istrian Gastronomy) is the result of many years of research by the author Tanja Kocković Zaborski. In an accessible way it explains how truffles, supa and prosciutto became symbols of Istria – not only as gastronomic specialities but also as strong regional brands. The author shows that gastronomic identity does not develop by chance, but through the cooperation of producers, tourist boards, institutions and the local community. 📖 Publisher: Ethnographic Museum, Zagreb.
