How is a dessert born that makes a whole dinner memorable? Nika Čavlović, head pastry chef at Zagreb's ManO2 and winner of the Pastry Chef of the Year trophy at Gault&Millau Croatia 2026, comes to EGCI for the first time as a mentor on Monday 9 November 2026! In the workshop "Creative Pastry Making" she will share how she develops restaurant desserts: from a seasonal ingredient to combining flavours, textures and temperatures. Fruit, vegetables and her own ferments are part of her pastry language, and participants will explore how such ingredients can find a place in their own offering. She further enriched her ManO2 experience with a stage at CODA in Berlin, a restaurant with two Michelin stars. She now brings part of that knowledge and research-driven approach to the teaching kitchen in Pazin. The workshop is part of the Autumn Workshop Cycle 2026 of the Istrian Gastronomic Education Centre (EGCI). When: Monday, 9 November 2026, 9:00 AM Where: EGCI – Istrian Gastronomic Education Centre, Gortanov brijeg 1, Pazin Registration: via the EGCI website (egci.azrri.hr)
