This workshop brings together two generations and two completely different views of the same ingredient. Franko Milotić, a professor of cookery and long-time expert in traditional Istrian cuisine, brings experience, knowledge of old recipes and a deep understanding of local ingredients, which he has passed on for years to cooks, konobas and agritourism farms across Istria. Matija Bogdan, chef of the 7 Seas restaurant in Njivice, winner of the Gault&Millau "Grand Chef of Tomorrow" award in 2021 and author of a modern Mediterranean cuisine with a strong local identity, will interpret the same ingredient through contemporary techniques, precision and a creative fine-dining approach. The focus is Istrian kid goat, presented through two culinary philosophies, from a traditional dish that respects original flavours and techniques to a modern interpretation showing how elegant, contemporary and gastronomically powerful this ingredient can be. The workshop is also part of a wider story about preserving the Istrian goat, where adding value to meat, milk and other products should give the breed new economic value and a long-term future. Comparing the two approaches will help participants recognise what gives a traditional dish its character and where there is room for their own refinement. Direct exchange with the two mentors is a valuable stimulus for designing an offering in which the local origin of an ingredient becomes a real advantage. About the lecturer: Matija Bogdan is executive chef of Aminess and of the 7 Seas concept on Krk and Korčula. He trained at Coi (San Francisco) under Daniel Patterson, then worked for more than four years at The Ledbury in London, rising to sous chef, and added experience at The Jane (Antwerp) and A.T (Paris). On his return he ran Mano in Zagreb, then took over the development and standards of the Aminess Gourmet team. The workshop is part of the Autumn Workshop Cycle 2026 of the Istrian Gastronomic Education Centre (EGCI).
