The workshop is led by Robert Perić, one of Croatia's most experienced cooks and pastry chefs, an outstanding educator and mentor who passes on his knowledge clearly, precisely and in a very hands-on way. Step by step, participants will go through the whole process, from choosing and preparing fruit to cooking, preserving, texture and flavour balance, so that they can apply what they learn in their own kitchens straight away. The workshop will not stop at classic jam. It will show how traditional recipes can evolve into modern, unexpected and highly attractive combinations, through a play of fruit, spices, acids, aromas and textures. Jams and preserves will be treated as a serious gastronomic tool that can link breakfast, cheeses, meat, desserts and fine-dining plates. The aim is to show how a seemingly simple product can become creative, sophisticated and a kitchen's recognisable signature. For participants it is a chance to find additional uses for seasonal fruit and develop their own combinations that fit into different parts of their offering. Understanding the process brings more confidence in the work, and creative refinements open the way to products by which guests will recognise the house. About the lecturer: Robert Perić is a professor of cookery and pastry and the executive chef of LF Catering, a prominent mentor and long-time lecturer at the Istrian Gastronomic Education Centre. He holds the title Maestro Cioccolatiere, earned through training in Italy, and is known for his revolutionary approach to cooking and his reinterpretation of local ingredients. The workshop is part of the Autumn Workshop Cycle 2026 of the Istrian Gastronomic Education Centre (EGCI).
